I debated with myself whether or not to write short posts on my blog. I’ve decided that’s it’s okay. I am opening up my life to you so I might as well share most things! 🙂 I have struggled over the years with being gluten free. I am allergic to wheat and I feel much better disease wise when I stick to a healthy diet, which will be a longer post in the future! Bread is my downfall, I adore bread! I’ve tried all kinds of store bought (very expensive) and assorted bread machine recipes over the years! Finally I found a recipe that works for plain old sandwich bread! It’s awesome. A little more work than the bread machine but well worth it. I wish I could take credit for the recipe but I can’t, only for the work preparing it! This is the link to the recipe by Jeanne, Soft Sandwich Bread Gluten Free from Jeanne at the Art of Gluten Free Baking. I followed the recipe exactly with the exception of a couple of things. I do not own a great mixer and my hand mixer just wasn’t up to snuff. I mixed the dry ingredients together with a whisk and the wet with the hand mixer. Once I combined them I used my hands and a spatula to really mix them together. I used regular milk, though it suggests you can use other liquids, I used Krusteaz All Purpose Gluten Free Flour and that’s about all of the differences. After I took it out of the oven to cool I sliced it and then put it in a ziplock to freeze it. Most breads you buy in the store are frozen to keep them fresh longer. I have found that if I take the slices I need out of the freezer when I want them and then slightly toast them they taste much better. (Unless you want to eat the whole loaf in a couple days and then I would leave it out.) Thanks Jeanne for the great recipe! I also have a few other different type of GF bread recipes that really worked for me and that I will add in the future.
